Recently, I picked a large bunch of basil from my Mom's large garden (mine seemed to barely grow). I used this bunch to make Cherries with Basil, Olive Oil Pesto, and this Pesto Butter. I love Pesto Butter for spreading on a crusty piece of French Bread or for making "butter noodles". It's also great for grilled or sauteed vegetables.
Anyway, it's super easy to make. I used a small food processor to blend...
one lightly packed cup of basil leaves
2 cloves garlic
handful of pine nuts
1/4 c. Parmesan cheese.
After this mixture was blended to a paste consistency, I add 1/2 c of softened butter (I use Land O' Lakes Light), but I'm sure you can use whatever type of butter/margarine that you prefer. I blended until smooth.
Then you have Pesto Butter. Simple. Delicioso. A great way to use a bumper crop of basil; it can be frozen and gifted!

What great ideas! I have two little basil plants on my back porch and I will definitely be harvesting some basil to try out these recipes. I am a big fan of anything I can freeze because I like to make BIG batches! I found you at new friend fridays and I'm glad I did, you have some great recipes!
